Apogee XII is a 12-year-old, premium “pure malt” whisky that has been elevated through an additional maturation in ex-Bimber casks.
Apogee draws from generations of historical expertise combined with modern virtuosity and elegance to offer an alluring, versatile and deeply captivating whisky.
Created as a celebration of the fine art of blending, Apogee offers flawless balance with additional layers of flavor and complexity derived from the vivid, fruit and spice-forward character of the ex-Bimber casks.
Initially matured in ex-bourbon barrel before being finished in an outstanding single oloroso cask.
The journey begins at our single farm, where 100% of our barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in our wooden washbacks that were hand-made at our own cooperage. We use direct fire to heat our small copper pot stills, and mature our spirit in hand-selected casks. Finally, we bottle our whisky onsite at our distillery.
A vatting of carefully selected EX-BOURBON OAK CASKS. Bourbon barrels are constructed from Quercus Alba, or white oak, commony known as American oak. This wood type complements the underlying character of our accessible fruit-forward spirit, imparting sweet, rich vanilla and caramel flavors alongside perfectly balanced spice. Every cask has been specially selected and married together in our hand-made oak vat, before being bottled.

Bimber's 1ST PEATED whisky. 14.4 in bottle PPM. This single malt London whisky is a limited release, each bottle is individually numbered, naturally colored, and non-chill filtered. A single malt of sublime quality that continues the rise of a new whisky era in England. Presented in an elegant wood pack.
Bimber The 1st Peated - is our inaugural foray into fully peated single malt whisky, and the first modern English whisky produced from peated barley that has been fully crafted on-site by the producing distillery itself. While there are other peated English single malt whiskies on the market, all of them have been created from barley peated off-site by a 3rd party maltster. The 1st Peated will stand alone as an expression shaped entirely by an English distillery.
