NOSE: The grain! Grassiness and freshly harvested grain with floral notes, some sweetness and, of course, the rye spiciness.
PALATE: Full mouth feel. Starts sweet with toffee and caramel then the wonderful peppery spiciness with hints of ginger and cloves.
FINISH: Long and sweet with the lingering pepper. “Hot pepper meets honey”.
Also available in cask strength.
Made from locally sourced 100% Ontario rye grain. Mashed, fermented and distilled by hand in small batches in a copper pot still, then matured in ex-bourbon barrels on site for a minimum of three years. Bottled exclusively as a single cask offering with no chill filtering and no artificial colouring added.
Our Rye whisky is unlike most "Canadian Whisky", commonly referred to by Canadians as "Rye", which typically contains relatively little rye grain, e.g. 5%. (See our Blended Canadian Whisky).
All spirits are made by hand, in small batches from grain to glass.

Founders and owners Barry Bernstein and Barry Stein established Ontario's first micro-distillery beginning production in March 2009. True pioneers of the craft distilling movement in the province, Barry and Barry have honed their skills as craftsman to create a range of spirits, with their flagship Stalk & Barrel whiskies leading the way. They are involved in every aspect of running the distillery and personally oversee each and every batch of spirits produced.
